Breakfast Sausage Sandwiches
Ingredients:
4 microwave turkey-sausage or sausage patties
1 cup fat-free egg substitute
1 thinly sliced scallion
1 Tbsp. chopped pimientos
¼ tsp. black pepper
2 slices low-fat cheese, cut in half
8 slices whole-wheat bread, toasted

In small bowl, combine egg substitute, scallions, pimientos and black pepper. Coat a 1-quart microwave-safe casserole with nonstick spray; pour in the egg mixture. Arrange microwave patties over egg mixture. Cover with vented plastic wrap. Microwave on medium 5 – 6 ½ minutes until egg is almost set in center, turning dish every minute. Remove from microwave. Place a half-slice cheese over each sausage patty and re-cover; allowing dish to stand 5 minutes to set eggs. Toast bread, and make sandwiches. Serves 4.

New Age Reuben
Ingredients:
2 ounces deli corned beef, sliced into thin strips
1 ounce shredded Swiss cheese
1 Tbsp. fat-free sour cream
1 Tbsp. non-fat plain yogurt
1 Tbsp. shredded cabbage
2 rice cakes

Mix ingredients (except rice cakes) in small bowl. Divide beef mixture evenly between rice cakes, and microwave on medium until hot and bubbly, 2-30 seconds.
